Perfect Smoked Oysters with Butter and Lemon

These delicious smoked oysters are cooked to perfection and then finished with melted butter, lemon, and white wine.
Adaptable for any grill or smoker, whether you are using a pellet grill like a Traeger, Camp Chef, or Pit Boss, an electric smoker like a Masterbuilt, or just a conventional propane grill like a Weber.

Equipment

  • Grill with Smoker Box or a Pellet Grill OR
  • Electric, Propane, or Charcoal Smoker
  • Oyster Shucking Knife

Ingredients
  

  • 24 Fresh Raw Oysters
  • Salt and pepper
  • Seafood Seasoning
  • Melted Butter, lemon juice, parsley optional
  • a Garlic White Wine Sauce optional

Instructions
 

  • Wash and Rinse your Oysters
  • Shuck open your Oysters with a good shucking knife and season with your salt, pepper, and your favorite seafood seasoning.

  • Fill the hopper and start up your pellet grill, or start your smoker, or gas grill and start to bring temperature up to 200 degrees. Set up your cooking area for indirect heating.

  • Add your smoking wood to the smoker (or smoking box if using a gas grill and continue to bring temperature up to 225 degrees F.

  • Place the oysters, in the shell, gently on the cooking grates of the smoker or grill and close the lid.

  • Maintain the smoker or grill at 225 deg F. for about 30-40 minutes and remove the oysters when they are firm or the internal temperature reads 140 deg F.

  • Add melted butter, lemon juice, and parsley, or your favorite white wine garlic sauce and serve immediately. You can also incorporate the smoked oysters into a smoked oyster dip or pasta dish.
